Menus and Fees
Rather than having defined menus with per guest fees for your event, we prefer to offer custom designed menus that meet your specific desires without locking you into menu selections you may or may not want. We will work with you to help you design your own menu. If you have a specific menu in mind, or a traditional item that you must have for your special event...just ask...we can typically meet any item request.
Our fees are structured around a BBQ Service Fee PLUS the actual butcher expense for your meat selections. We typically use the services of a local Shenandoah Valley butcher, Crabill's Meats in Toms Brook, VA. The BBQ Service Fee covers all of the equipment, rubs, spices, sauces, BBQ Pit Crew time on-site for the duration of the on-site smoking and meal service. Plastic and paper wares are included in this fee. The BBQ Service fee ranges from $475 and up, and is dependent on the estimated guest count, menu complexity and other services requested.
Meat selections range from our specialty...whole pigs Carolina style...to pork shoulders/boston butts for pulled pork, smoked pork loin, pork spare ribs, baby back ribs, sausages, beef brisket, beef chuck rolls for pulled beef BBQ, prime rib roasts, sirloin tip roasts, smoked chicken, whole lamb, lamb roasts, etc....if it walks or flies...we can BBQ it!
We can also provide pasture raised pork and chicken if you desire.
Fresh breads and rolls are available for those wishing to make a sandwich.
For your vegetarian friends, we often serve marinated and smoked portabella caps or grilled veggie burgers.
For your children, we routinely serve hamburgers and hotdogs with all the fixins.
Side dishes are usually provided per gallon, which serves 25-30 guests, or full size pans, which serves 40-45 guests. Our sides usually range from $30 to $50 per gallon, depending on selection. We can also provide smaller quantities for smaller events. Our sides are usually the "backyard picnic" genre with items ranging from cole slaw, red-skinned potato salad, fresh mixed greens garden salad, Caesar salad, Josh’s own unique smoked BBQ five bean medley, mac & cheese, pasta salad...to any desire you may have. If you want it...just ask. We are extremely flexible and our goal is to help make your event unique and special.
We can provide a variety of beverage selections, and if selected, the fees cover cups and ice for the event. We typically serve fresh on-site brewed Iced Tea, lemonade (from concentrate...NEVER powders), assortment of sodas and/or bottled water. We cannot offer alcohol at this time due to insurance and licensing requirements.
Hot and Cold Appetizers are also available...ranging from veggie trays, cheese and cracker trays, grilled bacon wrapped scallops, smoked portabella caps, grilled stuffed mushrooms, fresh fruit platter or salad, etc.
Desserts include a variety of sheet cakes and cookie and brownie trays.
